Delegates will split into groups, and each group will be given a product type, with ingredients list. Each group will need to discuss the product, identify what ingredients need replacing for a clean label product, decide on suitable alternatives, and then highlight technical challenges in reformulating in terms of recipe changes, processing changes, potential shelf life issues etc. Each group will then prepare a presentation to feedback their findings to the other delegates.
12.00 Feedback session
Each group will present their findings, and these will then be discussed and other potential solutions highlighted by the workshop leaders.
12.40 Q&A session
A final chance for discussion of clean label issues, giving the delegates a chance to raise any unresolved questions.
